Our coffee begins with the world's freshest finest Arabica beans. These top-quality beans are milder, more flavorful, and consequently more expensive than the harsher robusta variety, which frequently is used in most canned and instant coffees. The most aromatic, best-tasting coffee is a reflection of the soil, climate, and altitude in which it was grown. Before we commit to a purchase, we test the beans—roasting them in small batches, brewing them, and then tasting, or "cupping" the coffee to determine its quality.
After we purchase the beans, we continue to test and taste, to ensure that our roasting techniques are appropriate and consistent, so that every cup is just as good as the first.
We take such extraordinary care because we know that the secret of good coffee lies in the roasting. It's truly an art, and the roasters at Mountanos Brothers are regarded as some of the best in the country. Years ago after experimenting with every available roasting device, the Mountanos family chose the Jabez Burns Jubilee Roaster, which (with a few modifications of our own) gave us the roast we were looking for—controlled and even, every time. Our method of roasting creates a sweet, full-bodied, clean tasting coffee bursting with the full flavor of the bean.
